Batch Log

Mister Pastrami Batch Log keeps the record of each pastrami batch on the phone: the cure, the cook against the Food Code roast table, the two-stage cooling with live timers, cold and hot holding checks, the 7-day date mark, reheating and how the batch ended, with the permits and certificates the business keeps and their renewal dates.
